If you are cooking a sirloin or flank steak on the grille, knock yourself out, cook it any way that you like. But anyone that orders a quality cut of beef and has the chef cook all the tenderness and flavor out by turning it dark brown is mystifying to me. Medium (warm, pink center) is my choice of doneness. Your food, your way, ain't up to me. But you have to explain well-done to me, as opposed to medium-rare or medium, for example. Why?
