For Spielberg, I couldn't possibly boil it down to one favorite. I'll do it a little differently, if I might.
Best film: Schindler's List
Best film you may have missed: Catch Me if You Can
Guilty pleasure: The Terminal
Game changer: Jaws
TV movie debut: Duel
Tarantino is easy:

So many good ones is right, amazing body of work for both of them.
For Mr. Tarantino I'll go with Inglourious Basterds, never get tired of watching this one.
And Mr. Spielberg it would be Saving Private Ryan. I think it's the only movie that I've only been able to watch once. Incredibly powerful.

Hands down on Tarantino would be Pulp Fiction. Speilberg...Saving Private Ryen. I also like that Tarantino appeared in most of his films albeit mostly in cameo roles, same with the incredible one, Mr. Stan Lee.
