I'm looking at a $10 bill right now and it says on its face: "This note is legal tender for all debts, public and private." Would that not apply here?

From The Federal Reserve website.
Q Is it legal for a business in the United States to refuse cash as a form of payment?
A There is no federal statute mandating that a private business, a person, or an organization must accept currency or coins as payment for goods or services. Private businesses are free to develop their own policies on whether to accept cash unless there is a state law that says otherwise.

I went to visit my nephew in FL and I swear I would have starved to death without him because every place wanted me to order thru an "app" with a card or digital wallet.
It's just how things are these days......as an older person I always just say "it's their world now, I am just living in it." LOL
We didn't grow up this way but they did.
I might also point out something that many do not thinik about......that I know from living in a very warm climate. The amount of notes at stores down here that have notes on doors or at register that they don't accept sweaty, wadded up money, (and I can see their point!) .......nobody wants money from your sock, boot, bra, decolletage, etc. Let alone sweaty hands. And I myself wouldn't touch it. EWWW!
It's infinitely more santitary to just use a card or pay with your cell phone wallet. Faster, too.
When I am at oaklawn the condition of the bills the tellers give on the racing side reflects this...wrinkled, threadworn, folds, crinkles....... I have to walk over to the casino side and exchange them for nice bills.......otherwise I cannot even get almost ALL the bills the tellers give me in any of the automatic wagering machines (when lines are too long I just use the machines instead of a teller) and bills have to be nice and stiff to use in machines.
Of course I was taught to "respect money" so when I get bills, all are faced the same way in my wallet, and stored flat. That's just part of how my organizational mind works though.

So US currency is in fact, not necessarily legal tender for all debts, public and private? Or possibly buying a product or service is not creating a debt?

Hey and when you go to your hotel next year, make sure you stop at the store and buy some personal care products, because:
"Starting in January, hotels in New York state with more than 50 rooms will no longer be able to provide small bottles containing 'hospitality care' products.
It's a new state law to help reduce waste. Small bottles refer to any bottle under 12 ounces"

Delta Airlines (and I assume others) don't accept cash for in-flight purchases. I can kind of understand that as it's probably a pain to make change and slows things down.
On a related note... there are restaurants and other businesses in our area that add 3% to the bill if you use a credit card. So I guess that they see cash as a legal tender.
