How often do you rotate crops?

How often do you rotate crops? Normally we raise 1 year of rice, followed by 2 years of soybeans. So normally we have twice as many soybean acres as we do rice acres.

What do you do with all those acres in winter? The land owner rents some to duck hunters.
But basically it is wet and nasty muddy. We hope and pray it dries out in time to get it ready for another crop.

I have never eaten duck. I assume it tastes like chicken. In my youth I went duck hunting one time. Froze my butt off, hated it but went with some buddies and did't have a ride or I would have left. Anyone ever give fly fishing a try?
