Made a Shepherd's Pie for last night and tonight. Used ground beef instead of lamb.

You are eating a lot better than I am. My wife has many, many great qualities, (I may have one or two), but cooking isn't a strength for either one of us.

I think pound for pound (and value) there’s no better fish than cod...versatile, delicious and easy to cook in any jillion’s of ways....I like mine pan-roasted...a dredge in seasoned flour...sauté 3 minutes/side in butter/olive oil....a squeeze of 🍋 then whole pan in a 400 oven 7-8 minutes...I like my fish ‘rare’ so maybe a little longer if you do not....remove fillets to a plate then add some shallot or finely choppped any onion with some more butter....add a little white wine or lemon juice and some capers....reduce by 1/2...add the fish & any juices on plate...cook a couple of minutes....can’t beat it b.d.

Made a chicken salad for lunch today and Saturday. Back to the chicken stew for tonight and Saturday dinners,weather cold and raw until Sunday.

Back to the chicken stew for tonight and Saturday dinners,weather cold and raw until Sunday. a little secret...when we made chicken salad at the clubs we used turkey breast and called it chicken salad. the turkey has more flavor and does not need a lot of salt like a chicken breast or thigh does. lady golfers would complain the chicken salad made w/ chicken is to salty or no flavor at all. we also added chopped skinless apples-grapes-raisins. Went back to the cod tonight with some steamed veggies. Home made chocolate chip cookies for dessert.

Trying a pan fried chicken breast as the main. whatsinthepan.com/easy-pan-seared-chicken/sauce for veggies, Hollandaise sauce. for green veggies. also butter w/ lemon juice. or a compound butter. one is called "Matre' d Hotel" butter soften butter, lemon juice, chopped parsley, touch of tabasco sauce. chicken sauce. well once the chicken is sauteed, one can add wine to deglaze the skillet and then add chicken stock or broth either home made or store bought. if the chicken is floured first then can add it back to the skillet and will thicken a little. and once one deglazes the pan. saute some shallots and mushrooms. or just peppers or/and. onions. i use to make a sauce called Veloute sauce that is a "mother" sauce. its chicken stock or broth thicken w/ a roux. and one can add other food items to the sauce one chicken dish that is real tasty is chicken cutlets Romano (westeren pa ) or called Francaise' every where else. beat whole eggs and add grated Romano or Parm cheese. add chopped parsley and lemon juice. drege chicken in flour shake off excess the place in egg batter. w/ a skillet and using oil, oil must b hot but not smoking, place battered chicken and saute till a nice color and finish it a med hot oven. then top some sliced lemons and a lemon butter sauce. and a cheese sauce is always good w/ chicken

nice thread. i am about to butterfly a pork tenderloin and spice the hell out of it to go with my newly purchased sour cream, cilantro and tortillas with my just right avocados. please don't tell me i made a mistake buying organic cilantro-i will rinse and strain the %^&* out of it. I live without a conventional oven but have about everything i need to cook without one. anybody else have a nuwave oven?
